About Our Extra Virgin Organic Olive Oil

FROM A SINGLE FARM IN ITALY

Our extra virgin olive oils are 100% Italian and produced with single-origin olives grown in a family-owned estate located in the region of Puglia, Southern Italy. Only a few miles away from the coast of the Ionic Sea, this area is populated with century-old olive trees that remain intact thanks to the purity of air and water. 

 

CERTIFIED ORGANIC & SUSTAINABLE FARMING

Oil production is done according to the organic farming requirements: no chemical products, GM, artificial additives, fertilisers, growth promotors or herbicides are used and all products' maturity times are respected. Just like the nature intended. 

All of the olives used for our oils meet the strict quality requirements of European Union and USDA Organic certification. This certification guarantees that the oil is produced within a specified area and it satisfies defined sensory and chemical standards of quality and pureness.

The olive oil is stored under a controlled temperature between 59°F (15°C) and 64°F (18°C), to preserve its nutritional and wellness properties. It is protected by a modern system that prevents contact with the air that could potentially modify oils' organoleptic properties.

HIGH STANDARDS FOR A PREMIUM QUALITY ADD TO YOUR DISHES

Quality control of the products is monitored through modern top-notch equipment. However, farming and production processes still follow the ancient traditions that were passed down from generation to generation. 

Olives are selected carefully and crushed in oxygen-free chambers so that they keep a naturally delicate flavor. 

 

 

HARVESTED & CRUSHED THE SAME DAY TO MAINTAIN PURITY AND FRESHNESS

Olives are harvested in October and November through methods that do not alter their integrity and quality.  The organoleptic quality of olive oils also depend on the ripeness of olives used and therefore the period of harvesting is key to produce a high quality olive oil. 

According to the best standards for superior extra virgin olive oils, our olives are picked from the tree and not from the ground. This detail is highly important as it prevents olive deterioration due to falling and bruising. Only these olives maintain their aroma, flavor and other properties intact.

The olive mill is located by the farm so that olives can be crushed just a few hours after they have been harvested. This allows us to bring their natural freshness to your tables.

 

COLD EXTRACTED TO KEEP ORGANOLEPTIC PROPERTIES INTACT

Once the olives are sorted, selected and washed in cold water, they are crushed only through the use of mechanical tools. Additionally, the temperature is kept below 27° C (80.6° F), this means that our extra virgin olive oils are "cold extracted". These two steps are crucial to maintain the organoleptic properties of the oil. No solvents or chemical additives are used. Olives are the only ingredient we use!

Extra virgin olive oils should have a low acidity, measured as an oleic acid ratio which should be below 0.8%. The acidity of our olive oils stay below 0.3%.  

Approximately 10-11 pounds of olives are needed to produce 34 Fl. Oz (1 Liter) of extra virgin olive oil. 

 

 

THE FLAVOR OF PREMIUM EXTRA VIRGIN OLIVE OILS

Our premium-quality extra virgin olive oils leave the following sensations:

- spicy fruity: the pleasant flavor characteristic of fresh ripe olives,
- bitter: a pleasant acrid flavor sensation on the tongue
- pungent: a peppery sensation in the mouth and throat.

These sensations are the common attributes to look for in an olive oil as they are an indication of the high content of polyphenols and antioxidants.

Olive oils are known for having several healthy benefits. 

Among the most important, olive oil has been demonstrated to help reduce levels of obesity, leading to healthier heart. Replacing butter with olives helps balance the ration of Omega-3 and Omega-6 fats. 

IT protects against heart disease, as it controls the levels of "bad" cholesterol LDL and raises levels of "good" cholesterol, HDL. 

Extra virgin olive oils are also high in monounsaturated fats, also known as the "healthy fats", as they are beneficial to heart health. 

According to several studies, polyphenols are beneficial, natural anti-oxidant compounds that lower cancer risk.

Finally, olive oil is a natural moisturizer, regenerating skin cells and softening the tissue. No surprise it is also used as a skincare product.
