  • I just removed the cap and the oil doesn't come out

This can happen because our glass bottles have an anti-waste and anti-taper closure cap that protects the oil from oxidation and allows to serve the right amount of oil.

Just put the bottle 45 degrees as if you wanted to pour the oil and hit the bottom of the bottle with a few 'kicks".

If the oil still does not flow, tighten the twist-off cap back on the bottle and gently flip the bottle upside down a few times. Pour and repeat steps if necessary.

  • How should I store the olive oil?

Costabile Organic Olive Oils are bottled in a dark glass bottle to protect the oil from UV and keep the oil at peak taste. It's still recommendable to store the oil in a dry and dark place, like your cupboard.

Do not keep the olive oil in the fridge.

  • Is Costabile Olive Oil USDA Certified Organic?

    We believe in sustainable farming!

All our products are USDA certified organic and made like nature intended: no chemical products, no fertilisers, no GMO.

We firmly believe that organic farming is better for our health, our plants, life and environment. And it also tastes better!

  • Is Costabile Olive Oil really 100% Italian?

We are well aware about the many scams surrounding Italian Olive Oil. Many companies brand their olive oil as authentic Italian even though it is extracted from olives coming from other countries in Europe, Northern Africa and Middle East and 'only' bottled in Italy.

Costabile Olive Oil is extracted from olives from one single grove in Puglia, Southern Italy. Puglia is the region that produces the highest quantity of olive oil in Italy and is located right on the heel of Italy. Our olives come from a grove located a few miles away from the Ionic Sea.

Not only that! We also state clearly the varieties we use for our extra virgin olive oils: Leccino, Coratina, Frantoio e Ogliarola. They are traditional olive varieties typical of the Puglia region.

Our oils are certified by the organisation called ICEA that acknowledges both authenticity and compliance with USDA Certified Organic standards.

  • When are olives harvested?

Olives are harvested in October and November through methods that do not alter their integrity and quality. The organoleptic quality of olive oils also depend on the ripeness of olives used and therefore the period of harvesting is key to produce a high quality olive oil.

According to the best standards for superior extra virgin olive oils, our olives are picked from the tree and not from the ground. This detail is highly important as it prevents olive deterioration due to falling and bruising. Only these olives maintain their aroma, flavor and other properties intact.

The olive mill is located in the same farm so that olives can be crushed just a few hours after they have been harvested. This allows us to bring their natural freshness to your tables.

  • Is extra virgin olive oil compatible with vegan and keto diets?

Our organic EVOO are 100% plant-based and compatible with many healthy diets such as vegan, kosher, gluten-free, keto and low-fodmap.

  • What is the smoking point of Costabile Olive Oils

Extra virgin olive oils have a smoke point of 410 degrees at the time of harvest

This means that you can use EVOO also for cooking and frying in spite of the misconception that olive oil can only be used raw.

Also, our family in Italy has been using olive oil for cooking and frying for ages.

It's important to know that as all olive oils degrade over time, the smoking point also lowers gradually over time.

  • What is the polyphenol content of Costabile EVOO?

Our extra virgin olive oils have a polyphenol content of 620 mg/Kg. On average extra virgin olive oils have a 300 mg/Kg polyphenol content. According to several studies, polyphenols are beneficial, natural anti-oxidant compounds that lower cancer risk.

Additionally, polyphenols contribute to that peppery taste that you feel at the back of your throat after swallowing our organic olive oils.

  • Is it normal that I feel a peppery, spicy taste at the back of my throat?

It is not only normal but also a sign of the high quality of the oil.

Our premium-quality extra virgin olive oils leave the following sensations:

    - spicy fruity: the pleasant flavor characteristic of fresh ripe olives;

    - bitter: a pleasant acrid flavor sensation on the tongue;

    - pungent: a peppery sensation in the mouth and throat.

These sensations are the common attributes to look for in an olive oil as they are an indication of the high content of polyphenols and antioxidants.

  • What does Extra Virgin means? Are all olive oils Extra Virgin?

Let's start from the end: not all olive oils are Extra Virgin.

To be classed as extra virgin olive oil, the oil must contain no more than 0.8% acidity. Costabile olive oils have a 0.3% acidity, well below the maximum requirement. This acidity level is certified by lab tasting.

To achieve this acidity level, no chemicals have to be used in the extraction process. Only machinery is used to extract the oil from the olive fruit.

Another important factor is the temperature. Costabile olive oil is stored under a controlled temperature below 80 ºF (27 ºC), to preserve its nutritional and wellness properties. It is also protected by a modern system that prevents contact with the air that could potentially modify oils' organoleptic properties.
