Handmade Beet Ravioli with Sage and Garlic Infused Olive Oil

Ingredients (serves 2):

For the Beet Ravioli:

  • 1 cup all-purpose flour
  • 1 large egg
  • 1/2 cup cooked and mashed beetroot (cooled)
  • A pinch of salt

For the Filling:

  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

For the Sage and Garlic Olive Oil Sauce:

  • 2 tablespoons Garlic Infused Olive Oil
  • Fresh sage leaves for garnish
  • 1/4 cup grated Parmesan cheese
  • Freshly ground black pepper to taste

Instructions:


For the Beet Ravioli Dough:

1. In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Create a well in the center.
2. Add the egg and mashed beetroot to the well. Slowly incorporate the flour into the wet ingredients until a dough forms.
3. Knead the dough on a floured surface until it becomes smooth and elastic, approximately 5-7 minutes. Cover it with a damp cloth and let it rest for 30 minutes.

     

    For the Filling:

    4. In a separate bowl, mix the ricotta cheese, grated Parmesan cheese, salt, and pepper to taste. Set aside.

    Assembly:

    5. Roll out the rested beet ravioli dough into a thin sheet using a rolling pin or a pasta machine.

    6. Place small spoonfuls of the cheese filling evenly spaced on one half of the dough sheet.

    7. Fold the other half of the dough over the filling to create a long strip.

    8. Use a ravioli cutter or a knife to cut the ravioli into individual squares. Seal the edges by pressing them with a fork.

    Cooking:

    9. Bring a large pot of salted water to a boil.

    10. Carefully add the handmade beet ravioli to the boiling water. Gently stir to prevent sticking and cook for about 2-3 minutes, or until the ravioli float to the surface.

    For the Sage and Garlic Olive Oil Sauce:

    11. While the ravioli cook, heat the sage and Garlic Infused Olive Oil in a pan over low heat. This should take about 2-3 minutes.

    12. Once the ravioli are cooked, use a slotted spoon to transfer them directly from the pot to the pan with the infused olive oil. Toss gently to coat the ravioli evenly.

    13. Sprinkle the grated Parmesan cheese over the ravioli and continue to toss until the cheese melts and forms a creamy sauce.

    14. Season with freshly ground black pepper to taste.

    15. Serve the handmade beet ravioli in warm plates, garnishing each dish with a few fresh sage leaves.
