Ingredients (approx. 30 cookies)

- 1/2 cup lemon infused olive oil (certified organic)
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips

Directions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, whisk together the lemon infused olive oil and brown sugar until well combined.

3. Add the eggs and vanilla extract to the olive oil mixture, and continue to whisk until the mixture is smooth and creamy.

4. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a soft dough forms.

5. Gently fold in the chocolate chips until they are evenly distributed throughout the dough.

6. Using a spoon or a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving enough space between each cookie.

7. Bake for 10-12 minutes, or until the edges of the cookies turn golden brown.

8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
