Ingredients (serves 2):

  • 2 salmon fillets
  • 1/2 cup shelled pistachios, finely chopped
  • 2 medium-sized potatoes, thinly sliced
  • 2 carrots, thinly sliced
  • 2 sprigs of fresh rosemary
  • 2 tablespoons Costabile Lemon Infused Extra Virgin Olive Oil from Puglia
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the finely chopped pistachios with a pinch of salt and pepper.
  3. Drizzle 1 tablespoon of Lemon Infused Olive Oil over each salmon fillet, ensuring they are well-coated.
  4. Press the pistachio mixture onto the tops of the salmon fillets, creating a generous crust.
  5. Place the salmon fillets on a baking sheet lined with parchment paper.
  6. In a separate bowl, toss the thinly sliced potatoes and carrots with 1 tablespoon of Lemon Infused Olive Oil, salt, and pepper. Add the leaves from one rosemary sprig and mix well.
  7. Arrange the seasoned vegetables around the salmon fillets on the baking sheet. Place the remaining rosemary sprig on top.
  8. Bake in the preheated oven for approximately 15-20 minutes, or until the salmon is cooked to your desired level of doneness, and the vegetables are tender and slightly crispy.
  9. Garnish with fresh parsley before serving.
