Pumpkin pie with orange flavored olive oil, almonds and chocolate

Forget about butter! This pumpkin pie with orange flavored olive oil, almonds and chocolate is incredibly soft and moist.

USELESS TIP: You could store this doughnut for up to a week if you could only resist it!

INGREDIENTS:
- 9.5 oz pumpkin, cleaned and cut into cubes
- 5 fl. oz orange flavored extra virgin olive oil
- 3 eggs
- 7.8 sugar
- 8.5 flour
- 3 oz of almonds flour (blend the almonds for 5-10 seconds in a mixer)
- baking powder
- 3 oz chocolate chips

DIRECTIONS:
1. In a mixer, blend the pumpkin with the orange-flavored olive oil until you have a nice orange cream.

2. In a bowl, whip the eggs with the sugar until they are light and fluffy.

3. Add the sifted flour and baking powder, alternate with the pumpkin cream and continue mixing.

4. Add the almond flour. Add the chocolate chips previously floured and mix quickly with a spatula.

5. Grease and flour a 24 cm donut mold and pour the dough.

6. Bake at 345 F for about 50-55 minutes (to make sure it's ready insert a toothpick in the center of the donut, if it comes out dry and clean the donut is ready). Let the cake cool and then turn it out on a wire rack.
