Roasted carrot hummus with garlic-infused olive oil

It's as easy as delicious. And it's a great way to reduce food waste if your carrots are starting to look old.

Ingredients: ⁠
- 1 jar of cooked chickpeas⁠
- 10 oz of carrots⁠
- 1 tbsp tahini⁠
- 1/2 lemon⁠
- 1 tsp sweet paprika⁠
- 1 tbsp Garlic Infused Extra Virgin Olive Oil⁠
- Water⁠
- Salt⁠
Toppings:
- Sweet paprika
- Pumpkin seeds
- Garlic Infused Extra Virgin Olive Oil⁠

Instructions:⠀⁠
1. Preheat the oven and bake the carrots for 20 minutes at 360 F

2. Blend all the ingredients, except the topping, for a few minutes until you reach a creamy texture (adjust with water if necessary)⁠

3. Serve in a bowl and add some sweet paprika, pumpkin seeds and a drizzle of garlic-infused olive oil.
