- 1 pound sweet potatoes, cut into 1/2-inch thick rounds (washed well, with peels on);
- 3 tablespoons of our Organic Garlic-infused Extra Virgin olive oil;
- 2 tablespoons roughly chopped fresh cilantro, stems removed;
- 2 tablespoons roughly chopped fresh chives;
- sea salt and freshly ground black pepper, to taste
- red pepper flakes, to taste, optional
Instructions:
1. Preheat the oven to 425ºF.
2. Toss the sweet potato rounds in a large bowl with 1 tablespoon of the garlic infused olive oil, sprinkle with sea salt and black pepper, to taste.
3. Arrange in a single layer in a shallow baking pan or cookie sheet. Bake until tender and golden brown, it will take about 25-30 minutes.
4. Meanwhile in a small bowl mix together the fresh herbs with 2 tablespoons of garlic infused olive oil, add salt and pepper to taste, red pepper flakes, if you’d like. Stir well to combine.
5. Spoon the herb mixture over the roasted sweet potatoes and serve.
